Somebody once described Thai cuisine as a hybrid, influenced by noodles from China, curries from India and satays from Indonesia. At Chiang Rai things tend to concentrate on the northern parts, introducing new items to the menu which may not be quite so familiar as your standard Thai. There is also a heavy influence from the vegetarian dishes.
